Finally things are returning to normal in my part of the woods. Stores are opening to larger capacity and longer hours. It feels safer to move into activities abandoned a year ago. Finally…back to the call of the antique stores! I was truly worried I would make up for lost time and desire entire store inventory! It was tempting but I resisted. I did pick up some small cute “homey” items. Maybe this pandemic made me really look at things and prioritize a little more. Maybe my collecting instincts were rusty. Not sure, but I really love what I bought and found places for them immediately!

Meraki Link Party@Doodle Buddies

Do you like butterscotch? It seems like one of the flavors I really don’t think much about when compared to chocolate and caramel. But a bag of butterscotch chips has been rolling around my freezer for some time now and today I just felt the need to put it to use. Bar cookies are always a hit around these parts. They didn’t last long.

The Usual Cast Of Characters

1/2 cup butter, softened

2 cups brown sugar

2 teaspoons vanilla

2 large eggs

2 cups all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup butterscotch chips

The Steps To Glory

• Preheat the oven to 350 degrees.
• In a medium-size bowl, cream together the butter and sugar.
• Add the vanilla and eggs. Mix well.
• Add the flour, baking powder and salt.
• Mix well.
• Fold in the butterscotch chips
• Spread the batter in a well-greased 9×13 pan.

• Bake for 30-35 minutes or until the bars are set in the middle.
• Cut while the bars are still warm.
• Store any leftovers in an airtight container.

I love this quote from Lady Bird Johnson…”Where flowers bloom, so does hope…”. It seems even more appropriate this spring as we are slowly regaining our footing after such a topsy-turvy year. The flowers seem brighter, the air smells sweeter and the laughter of my Princess so precious. There is hope. I like that. I also like bringing a bit of that springtime hope into my house.
