Christmas Past

Don’t have more than a few rooms to decorate this year…yes, it will be worth it, but gosh, I miss my cozy Christmas house. Light touches to share next week. Enjoy the lovely Christmas past!

I really don’t like to decorate and I only have a few Santa’s…and stockings…and Nativity sets…and cookie cutters. Who am I kidding?Christmas is happening here. I don’t remember being completely done so early before. A quiet Thanksgiving at home did give us time to drag out boxes and bins. It’s nice to have everything so settled. Time to break out the eggnog and Christmas movies! Are you almost done as well or still in progress? I hope the season brings everyone glad tidings of comfort and joy!

This week

Just keeping it real…this is my existence right now…and this the most organized part.

As much as I look forward to this renovation, it’s super stressful as well

This was my kitchen and laundry room.

This is kind of our outside wall. We can hear the wind whistling this very minute.

So we did this! It was fun and allowed us to escape the banging and crashing.

Any advice or words of wisdom from anyone who has been there? What has worked to keep your renovation sanity? How did you get through the day to day? I am open to any and all suggestions.

Tasty Pumpkin Bread

The renovation is starting to get real…actual walls are going up on Monday. This is fabulous news…until I realized my kitchen will be out of commission for a significant amount of time. What am I to do? Bake pumpkin bread of course, and think about my dream kitchen!

The Usual Cast of Characters

2 cups granulated sugar

1/2 cup butter , softened

3 large eggs

2 teaspoons vanilla extract

15 ounces canned pumpkin purée

2 3/4 cups all-purpose flour

1/2 teaspoon baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

3/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 cup milk

12 ounce package chocolate chips (or realize way too late you have no chocolate chips and hastily substitute Reese’s mini pieces)

The Steps to Glory

1 Preheat oven to 350 degrees F. Line the bottom of two loaf pans with a piece of parchment paper. Spray all over with cooking spray.

2 Add the sugar and butter to a mixing bowl and beat with an electric mixer until well combined. Add eggs, pumpkin and vanilla and mix to combine.

3 In a separate bowl mix together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.

4 Alternately add flour mixture, then milk to pumpkin mixture, starting and ending with flour. Fold in chocolate chips at the end.

5 Pour the batter into prepared pans. Bake at 350 degrees F for 45-55 minutes or until a toothpick inserted comes out clean. Cool for a few minutes in the pan before inverting onto a wire rack to cool.

6 Mini loaves will bake for around 25-35 minutes.
