And We Have Snow!

Very softly and silently, it snowed last night to everyone’s delight. It was lovely outside and cozy inside. Perfect to a morning of sledding followed by a comforting hot beverage. The Princess had Hot Chocolate. My Hero and I enjoyed a Hot Buttered Whiskey. Pretty decadent but hey, when it snows enough to sled for the first time in two years you celebrate.

The Usual Cast Of Characters

  • For the Batter:
  • 1 stick butter (room temp)
  • 3/4 cup brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon all spice
  • 1/8 teaspoon clove
  • For the Drink:
  • 2 ounces whiskey
  • 1 ounce batter (hot buttered)
  • 4 ounces water (hot, or to fill)

The Steps To Glory

  1. Gather the ingredients.
  2. Add all of the batter ingredients to a large bowl.
  3. Using a mixer with paddle attachment, mix well for 1 to 2 minutes until all ingredients are incorporated.
  4. Turn the batter out onto a sheet of plastic wrap or spoon into ice trays
  5. Wrap tightly and refrigerate for at least 1 hour or until firm.
  6. The batter cubes can be frozen for up to 3 months!
  7. Slice off a good dollop of the batter (about 1 ounce) or add batter cube and add it to a warmed mug or glass.
  8. Add the whiskey and fill with hot water until desired consistency.
  9. Stir well

The Discovery

This week I did a little organizing in my kitchen, it’s amazing how many really cool things are rediscovered…almost like Christmas morning. You realize many of the things were actually part of a Christmas morning in the past. You get very excited to use them and hopefully, store them in a more convenient place to use in the future. Case in point, a scone pan. I love scones, I love to make scones but sadly, have not made them in a really long time. This Sunday I fixed the issue with some cranberry coconut scones. You have to try them!

The Usual Cast of Characters

  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ tsp salt
  • 2 Tablespoons granulated sugar
  • ⅓ cup unsalted butter, cold and cubed
  • ¾ cup shredded unsweetened coconut, plus extra for topping
  • ½ cup dried cranberries
  • ½ cup full milk
  • ½ tsp vanilla
  • milk for brushing on top

The Steps to Glory

  1. Preheat your oven to 400˚F.
  2. In a large bowl mix flour, baking powder, salt and sugar together. Using a pastry cutter, cut butter into flour mixture until fine crumbs form.
  3. Transfer to mixer (this is optional)
  4. Add milk and vanilla, mix until ragged (your mixture will be very dry).
  5. Add cranberry and coconut
  6. Spray your scone pan and press dough lightly into triangles or follow directions below if you don’t have a pan.
  7. Another option: Pour mixture out onto a lightly floured work surface and bring together (gently, not to over mix). Pat and shape into a rectangle 1 inch thick. Using a sharp knife cut the rectangle in half, and then cut into 5 triangles on each side (giving you 10 in total).
  8. Place each triangle on your lined baking sheet approx. 2 inches apart.
  9. Brush the tops of the scones with milk and sprinkle the tops with more coconut.
  10. Bake for 15-20 minutes or until bottoms are browned and scones have puffed and set in the middle.
  11. Enjoy scones warm. They will last up to a week in the refrigerator or freeze for longer life. They make an awesome breakfast!

Or, dress for a party to truly enjoy them.

Necessary cozy

Anyone else craving a healthy dose of cozy this weekend? Last week was difficult and overwhelming at times. Enough said. I really needed to turn off the news and turn on the familiar, comforting, cozy elements at home. I wanted to show you some of my favorite spots to settle and breathe. Did you find your cozy spot this week?
