Sometimes on a cold January day, you crave something comforting. Perhaps it’s the daunting realization that the cold weather is indeed here for a while, the process of dismantling the Christmas joy from the house or simply exhaustion from the the holiday whirl of excitement. Whatever the trigger, you simply want to return to the simplicity that comes with winter. For me, oatmeal is the answer…more specifically peanut butter oatmeal. Easy to make in the slow cooker, oh so yummy to eat!
The Usual Cast of Characters

1. 1 cup steel cut oatmeal
2. 3 cups milk or combo of water and milk
3. 3 tablespoons brown sugar
4. 1/4 cup honey
5. 1/2 to 1 cup peanut butter. Smooth or chunky will both work
The Steps to Glory

1. Dump all ingredients into a slow cooker

2. Cook on low overnight for 8 hours

3. Enjoy for breakfast with any toppings you find yummy. I like to add bananas, apple slices, raisins, shredded coconut or chocolate chips!

I like oatmeal cookies made with peanut butter, so why not hot oatmeal? Sounds good. I’m the only one that eats it though, so it would make much too much.

Amy, your breakfast looks so healthy and delicious, but I am a bit intimidated by the ‘8 hour’ bit !! I can’t even handle pressure-cookers !! I’m always searching for quick and easy breakfast and snack ideas. I would love to make this dish, one day.
