Sometimes on a cold January day, you crave something comforting. Perhaps it’s the daunting realization that the cold weather is indeed here for a while, the process of dismantling the Christmas joy from the house or simply exhaustion from the the holiday whirl of excitement. Whatever the trigger, you simply want to return to the simplicity that comes with winter. For me, oatmeal is the answer…more specifically peanut butter oatmeal. Easy to make in the slow cooker, oh so yummy to eat!
The Usual Cast of Characters
1. 1 cup steel cut oatmeal
2. 3 cups milk or combo of water and milk
3. 3 tablespoons brown sugar
4. 1/4 cup honey
5. 1/2 to 1 cup peanut butter. Smooth or chunky will both work
The Steps to Glory
1. Dump all ingredients into a slow cooker
2. Cook on low overnight for 8 hours
3. Enjoy for breakfast with any toppings you find yummy. I like to add bananas, apple slices, raisins, shredded coconut or chocolate chips!
I can’t believe it is almost Christmas. I really believed with a scaled down Christmas schedule the season would stretch out and seem forever. Would this be a bad thing? Maybe, but I must admit Christmas this year is much less chaotic and rushed. I’ve enjoyed our decor and simple holiday traditions. Baking sugar cookies was actually a highlight of a day rather than an add-on activity. Shopping from the house from the comfort of my couch was also pretty great. I did miss the last week of school flurry of business as we pivoted to virtual school temporarily, but delivering gifts to my students’ homes was delightful…in a safe distant masked way.
