Pumpkin Pumpkin Everywhere

‘Tis the season for all things pumpkin and I especially adore adding this Fall favorite to all my baking. The problem…the recipes always seem to call for one cup of pumpkin purée and my trusty can of Libby’s holds many, many more.  I am always on high alert for pumpkin flavored yumminess and when I saw this recipe for pumpkin cornbread, well, I had the frozen purée out of the freezer before the recipe was completely pinned to my pumpkin board.


The usual cast of characters 

Servings: 12 muffins

Ingredients
1 cup canned pumpkin purée (such as Libby’s)

1 cup low fat milk

1/4 cup plus 2 tablespoons honey

1/4 cup sugar

2 large eggs

1-1/4 cups yellow cornmeal-May I add a shout out to my beloved Bloody Butcher Red Cornmeal from Castle Valley Mill…it is the bomb!

3/4 cup all-purpose flour, spooned into measuring cup and leveled-off

1 tablespoon baking powder

1/2 teaspoon baking soda

3/4 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon cloves

4 tablespoons unsalted butter, melted

The Steps to Glory

Preheat the oven to 400°F. Spray 12-cup muffin tin generously with nonstick cooking spray or grease with butter.( or use a cute pumpkin pan like me!)
In a medium bowl, whisk together the pumpkin purée, milk, honey, sugar and eggs.

In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt and spices.

Add the wet ingredients and melted butter to the dry ingredients and mix until just combined. Do not over-mix.


Spoon the batter into the prepared muffin tin, filling each cup full, and bake for 20-23 minutes, or until the tops are a golden-orange color and set. Let cool in the pan for about 10 minutes, then serve warm with butter or transfer to a rack to cool completely.

How is it possible that next week my beloved month of October slips away into November. Not that I don’t enjoy November, but it seems to always be lost in the frantic busyness of the holiday season. Some New Old Stuff…The Red Edition 

Isn’t Fall the best! Especially when the air is crisp, the leaves are in full color and there is a college football game within walking distance of your house. We won’t talk about the result of yesterday’s Navy vs UCF game, however the excitement of a good tailgate, energetic cheerleaders and beloved hometown team makes for a memorial Saturday afternoon.  Also exciting, packages on my front porch…with French postmarks…holding treasures from far away.  So much new red for my home…let me show them off!


Just look at this gorgeous big pitcher.  I am completely undone for the French Lustucru design…

…completely undone…what can I say? Would you be able to resist this sweet milk jug?

Oh, the beauty of Victorian red work! I spotted this beauty in a local antique shop and just knew I could not leave it there. 


I know…the pumpkins are not technically all red but the eight sided enamelware tray holding them is a lovely red and white!


Another great Fall experience for the Princess is the discovery of cornhole. She is still on the basics…like correct playing distance.

Way up High on the Apple Tree…

One of my favorite things to do in the Fall, and probably one of the highlights of my year, is our annual family apple picking adventure.  Nothing tops that first bite of a crisp, juicy apple you just picked right off the tree. We have several orchards in the Charlottesville Va area that we love to visit and each has its own special vibe, but I am particularly excited when we arrive at my favorite, Grelen Nursery and Market in Somerset Va. I love the relaxing and easily accessed Apple orchard, the beautiful gift shop and Nursery, outstanding food and drink and gorgeous scenery that I could gaze at all day.  Enjoy some snapshots of our special day and consider a trip for yourself to this magical destination…perfect every season of the year!

It is finally feeling like Fall here in Annapolis. The rainy, cooler evenings are just made for a good crockpot meal.  Tonight we are having Taco Soup, but I can’t wait to try the Pumpkin Chili from Crafting a Family…

The Pretender: A Book Review

About the Book

My Review 

The only thing I did not like about this book is the fact they I need to wait for the next book in the series to find out what happens with our star crossed lovers…yes I was that invested. I enjoyed meeting this very intriguing family that includes the quintessential Italian parents, the artistic and passionate youngest, and only, sister and brood of doting older brothers who range from cowboy to international spy to up and coming politician.  They are loud, protective and determined to preserve the family honor.  

Enter the lost, wondering Soul, Noah, orphaned at a young age, raised by his older preacher brother and rebellious against everything and everyone. When a chance meeting at an art show brings him face to face with Tillie, the artistic sister, there is instant love…and we also fall in love with the idea of this adorable couple. It is heartbreaking as a series of misunderstandings keeps them apart and forces them to begin life without the other.  

If you enjoy the idea of true love, new beginnings and family pride and tradition, this series is a perfect read.
