I can do better than Store Bought

I haven’t baked for a while, life got busy all of a sudden. I found myself in the commissary cookie aisle, reaching for a package of baked goods, and realized, I had become the Mom who buys cookies, instead of making homemade goodness. This made me sad, and motivated me to break out my baking gear and get busy. Seriously, there are few things in life that are truly relaxing for me…baking is one of them. This sweet bread is always a hit and perfect for lunchbox treats!

Cranberry Sweet Bread

  • 5 tbsp unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp Vanilla extract
  • 1 tsp Ground Cinnamon.
  • 1/3 cup plain greek yogurt or Sour Cream
  • 3 medium bananas, overripe, mashed with fork
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dried cranberries

INSTRUCTIONS

  • Preheat oven to 350°F. Grease or spray with non-stick cooking spray a 9 x 5 inch loaf pan.
  • In a large bowl, with the mixer set on medium, cream the butter with the sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla, cinnamon, greek yogurt. and bananas. Beat on low speed to combine.
  • In medium bowl, combine flour, baking soda and salt.
  • Add dry ingredients to the banana mixture, beating on medium speed for one minute. Scrape down bowl as needed. Fold in cranberries until well distributed.
  • Spread into prepared pan. Bake on center rack of oven for 1 hour to 1 hour and 15 minutes, or until toothpick inserted in center comes out clean. I used mini loaf pans for extra cuteness
  • Allow to cool for 10 minutes on a wire rack. Remove from the pan and cool completely on the wire rack.

I think the Princess has the baking bug as well!

A Little Love!

It is truly shocking to realize it is already February. Christmas seems like yesterday…or months ago…I do know I am still finding the occasion pine needles in odd places. But February it is, on to the next holiday. Valentine’s Day always stumps me…is it a winter holiday or a nod to the upcoming spring with all the pastels and softness? I don’t know, but I do try to add a little Valentine essence to my decor…enjoy just a few touches!

Where is Winter?

I’m really not complaining, but 50 degrees in January just feels…weird. I mean shivering on the playground when I have duty is less than delightful but snow falling overnight to assure a few more hours in bed is lovely. I’m sure we will get a foot of snow…the first day of Spring, just when the trees start to bud. Oh well, I still feel the cozy vibe inside my house, thanks to some new to me purchases. I just love vintage/antique touches in a home, don’t you?

Oh this quilt…it stole my heart the moment I laid eyes on it. Can you blame me?

A tiny chair tucked into a corner.

An old milk bottle filled with greenery is pure winter joy.

A few more transfer wear plates…I don’t care if they match.

Also a winter tradition…Army/Navy basketball…we’ll get you next time Army!

Waiting for Snow

I’m really not a fan of snow. The actual snow event is lovely with the snow gently falling and cozy times in front of the fire, and hopefully, a snow day from school. Sledding is also fun, provided you have a sled…which we do, and it has never been used. The following days with the slush, frozen roads, muddy playgrounds, cold winds and scrapping off the cars don’t thrill me. We had a slight chance of snow in our forecast this weekend, and despite the fact it was already a three day holiday, I kind of hoped we would see the cold whiteness fall from the sky. If only for the fact that the sled has been sitting in our garage for a year just waiting to be used. We saw a few flurries before the cold rain…oh well, there is always February. Anyway, enjoy a few more touches of winter inside our house!

We may not have snow, but a roaring fire still feels great!
