The Joy Of Corn Chowder

Christmas is in the rear view mirror and Winter is straight ahead. It is time for snow, and snow days, to be a reality. It’s time for mittens and gloves to be mandatory daily wear and not optional. It’s time for cozy evenings by the fire and it’s time for the cozy enjoyment of homemade soup. We started our New Year with this hardy, tasteful meal. I’m mighty glad we did.

The Usual Cast Of Characters

4 cans creamed corn or 2 cans creamed and 2 cans regular corn. You can also used frozen corn.

6-8 quartered red potatoes or more for a chunkier texture.

2 cups chicken broth

1/2 cup Half and Half.

Salt and pepper to taste

The Steps to Glory

1. Place chicken broth and quartered potatoes into a crockpot. Cook on low for 4 hours until potatoes are soft enough to chop into chunky little pieces.

2. Add corn. Cover and cook for 1 hour more.

3. Add half and half. Stir and cook 10 more minutes. Salt and pepper to taste.

4. Top with sour cream, cheddar cheese or crumbled bacon.

5. Enjoy the cozy meal as a family.
